Pre-heat oven to 200C/gas mark 6.
On the stove top, heat extra virgin olive oil in an oven-safe frying pan or dutch oven.
2 tbsp Extra Virgin Olive Oil
Fry onion on medium heat until it starts to soften then add sausages and cook until browned.

Drain the plum tomatoes reserving the liquid, pressing out as much of the liquid as possible.
400 g Plum Tomatoes
Cut the sausages in the pan into bite-size pieces (with scissors is easiest).
When sausage is cooked through and onions are browning, push them to the side and add the drained plum tomatoes.
Smash them into a single layer and leave to caramelise. About 10 minutes, but don’t rush this step, the browning is important for depth of flavour. If using fresh peppers add them now to char with the tomatoes.
1 Red Pepper
Add beans, garlic and vinegar and stir everything together for a couple of minutes until vinegar has evaporated and garlic is fragrant.
4 Garlic Cloves, 400 g Haricot Beans, 1/2 tbsp Red Wine Vinegar
Add chicken stock and enough water to barely cover sausages.
1 Chicken Stock Cube
Bring to a simmer then place in the centre of the oven for 40 minutes or until sauce is thick enough.
