All-Day Sausage Casserole

A healthy take on sausage and beans, this sweet and simple one-pot casserole can be enjoyed for dinner with steamed vegetables or breakfast with eggs and toast. Packed with protein and flavour, this hearty feast is the ultimate comfort food.

Ingredients
  

  • 2 tbsp Extra Virgin Olive Oil Sopraffino di Ceraso
  • 1 Onion Finely Chopped | White or Brown
  • 4 Garlic Cloves Minced
  • 6 Pork and Apple Sausages
  • 400 g Plum Tomatoes
  • 400 g Haricot Beans Rinsed and Drained
  • 1 Red Pepper Diced
  • 1 Chicken Stock Cube
  • 1/2 tbsp Red Wine Vinegar
  • Cracked Black Pepper

Instructions
 

  • Pre-heat oven to 200C/gas mark 6.
  • On the stove top, heat extra virgin olive oil in an oven-safe frying pan or dutch oven.
    2 tbsp Extra Virgin Olive Oil
  • Fry onion on medium heat until it starts to soften then add sausages and cook until browned.

  • Drain the plum tomatoes reserving the liquid, pressing out as much of the liquid as possible.
    400 g Plum Tomatoes
  • Cut the sausages in the pan into bite-size pieces (with scissors is easiest).
  • When sausage is cooked through and onions are browning, push them to the side and add the drained plum tomatoes.
  • Smash them into a single layer and leave to caramelise. About 10 minutes, but don’t rush this step, the browning is important for depth of flavour. If using fresh peppers add them now to char with the tomatoes.

  • Add beans, garlic and vinegar and stir everything together for a couple of minutes until vinegar has evaporated and garlic is fragrant.
    4 Garlic Cloves, 400 g Haricot Beans, 1/2 tbsp Red Wine Vinegar
  • Add chicken stock and enough water to barely cover sausages.
    1 Chicken Stock Cube
  • Bring to a simmer then place in the centre of the oven for 40 minutes or until sauce is thick enough.
