Bavarian Style Potato Salad (No Mayo)

This tasty side dish requires no butter or mayo to make the potatoes shine. Slathered in immune-boosting ingredients, the hot Bavarian-style potato salad goes well with just about anything.

Ingredients
  

  • 5 Medium Sized Potatoes
  • 1 Onion White or Brown
  • 3 tbsp Apple Cider Vinegar
  • 3 tbsp Extra Virgin Olive Oil Terra Andúyar
  • 1 tbsp Honey
  • 1 tsp Salt
  • 2 tsp Cracked Black Pepper

Instructions
 

  • Cut potatoes in ½” slices or 1” cubes.
    5 Medium Sized Potatoes
  • Put 1” of water into a saucepan and bring to a simmer.
  • Place potatoes in a colander and rest it in the saucepan and cover. Alternatively use a steaming basket.
  • Keep the heat low and steam the potatoes for 15-20 minutes.
  • Meanwhile, heat oil in a pan and sauté diced onion on medium heat until soft and golden.
    3 tbsp Extra Virgin Olive Oil, 1 Onion
  • Add vinegar, honey, salt and pepper and stir through until warm.
    3 tbsp Apple Cider Vinegar, 1 tbsp Honey, 1 tsp Salt
  • When potatoes are soft, transfer them to a bowl and pour over the hot onion mixture.
  • Stir to combine and leave the absorb the juices for 10-15 minutes.
