Bavarian Style Braised Greens

Inspired by German braised cabbage, this is a simple way to enjoy a medley of nutritious greens in the colder months to stay healthy and feel satisfied. Ingredients
  

  • 1 tsp Salt
  • 1 Small White Cabbage
  • 1 bunch Spring Greens
  • 1 bunch Spring Onions
  • 100 g Tenderstem Broccoli
  • 3 handfuls Spinach

Vinaigrette

  • 1 tsp Salt
  • 3 tbsp Extra Virgin Olive Oil Sopraffino di Ceraso
  • 4 tsp Black Cracked Pepper
  • 4 tsp Cayenne Pepper
  • 3 Garlic Cloves Minced
  • 1 tbsp Red or White Wine Vinegar

Instructions
 

  • Roughly chop all the greens apart from the spinach, rinse and combine in a large bowl.
    1 Small White Cabbage, 1 bunch Spring Greens, 1 bunch Spring Onions, 100 g Tenderstem Broccoli
  • Sprinkle over 1 teaspoon of salt and stir then crush them together in handfuls to let the salt absorb.
    1 tsp Salt
  • Mix together the vinaigrette (add more vinegar if you like a more tart flavour) and heat on low in a large pot for 2 minutes until aromatic.
  • Add the bowl of chopped greens, stir well and cover.
  • Braise the green until softened, stirring occasionally, 25-30 minutes.
  • Stir in the spinach and cook uncovered for another 5 minutes.
