Crispy Smashed Air Fryer Potatoes

Smashed potatoes are an easy way to enjoy the crispiness of roast potatoes without the long cooking times. A great accompaniment to a casserole or roast, or even to top a salad that isn’t quite hitting the ‘feeling full’ button.

  • 1 Air Fryer
  • 2 Chopping Boards Can use suitable alternative to press potatoes

Ingredients
  

  • 8 Small Potatoes
  • 2 tbsp Extra Virgin Olive Oil Terra Andúyar
  • 2 tbsp Polenta or Corn Meal
  • 1 tbsp Garlic Powder
  • 1 tsp Salt
  • 2 tsp Cracked Black Pepper

Instructions
 

  • Wash potatoes then add to a pot, pour in enough fresh cold water to just cover them.

  • Bring to a boil then leave for 15 to 20 minutes depending on the size of the potatoes.

  • Check the potatoes are soft with a fork then drain and leave until dry.
  • Place slightly cooled potatoes on chopping board and with another board push down on them until they are about an inch thick.
  • Drizzle about half of extra virgin olive oil over them and brush to cover.
    2 tbsp Extra Virgin Olive Oil
  • Sprinkle half the polenta, garlic powder, salt and pepper over them and press into the potatoes. Turn them over and repeat on the other side with oil and spices and drizzle with a little extra olive oil.

  • Place in a single layer in the air fryer basket and fry at 200C for 10 minutes then flip them over and fry for another 10 minutes or until golden and crispy.
